Good Old Pork Spareribs

(Ready in about 3 hours 15 minutes | Serving 8)

Ingredients:

4 lbs. pork spareribs

1 cup brown sugar

¼ cup ketchup

¼ cup soy sauce

¼ cup Worcestershire sauce

¼ cup rum

½ cup Chile sauce

2 cloves garlic, crushed

1 tsp. dry mustard

1 dash ground black pepper

Directions:

Preheat the oven to 350°F (175°C). Slice the spareribs into serving sized portions. Wrap the ribs twice in heavy-duty aluminum foil. Bake the wrapped ribs for about one and a half hours. Unwrap and discard the foil. Drain the meat juice drippings, and place the ribs in a large roasting tray.

Combine and mix thoroughly all the remaining ingredients in a mixing bowl to make the barbecue sauce. Coat generously all the surfaces of the ribs with the sauce, and allow marinating for about an hour under room temperature.

Prepare for an indirect grilling procedure by preheating the smoker to medium heat. Coat lightly the grate with oil. Set the grate at about four inches away from the heat source.

Place the ribs on the grate, and grill directly for about half an hour. Brush each side of the ribs with the marinade, flipping once.
